Grass Fed Highland beef will be very lean and tender with a more intense and almost sweet grassy flavor. Gryphon Ranch is the only commercial Highland beef operation in Arizona.
To provide you the very best meat possible we do not load our animals into a trailer and send them to a USDA facility. Your beef is slaughtered right here at the ranch so there is no stress to the animal and then hung in a mobile refrigerated trailer to be moved to the butcher for two weeks of dry aging to ensure the maximum tenderness. Yes - you can have lean healthy beef that is tender. Only then is your beef cut and wrapped YOUR way right here at the ranch by an Arizona licensed abattoir - 100% to your order - all included in the price below. Your beef is born here, raised here and cut and wrapped for you. You know you are getting YOUR meat!
The price includes everything - no extras - no surprises! We charge by the hanging weight which is the weight after the animal is butchered without head, horns, hide or organs. Typically, a grass finished animal is around 475-650 pounds hanging weight for a full animal. With the recent drought the sizes are running on the small side. We do not use growth hormones or grain to increase size. Our feeding is compliant with the American Grass Fed Association standards and we are proud to be inspected each year to ensure compliance and we carry the national AGA certification.
In compliance with Arizona state law and Federal law we can sell only by the full or half animal. Unfortunately, due to increasing production costs we can no longer afford to offer quarter shares. Please let us know if you want the bones and/or any of the organ meat. That is all included in the price. No extra charge or surprises.
We have only a fixed number of grass finished animals each year. Remember that it takes almost 3 years to grow a Highland to be ready for you. Once you have enjoyed grass fed and grass finished beef - we know you will be spoiled. Grass fed beef has a different flavor than store bought - you are tasting real beef! Think of plucking that warm tomato off the vine when you were a kid and biting into that wonderful flavor - now compare that to a store bought tomato. Doesn't taste the same does it? We guarantee your beef - if you don't like the flavor or how it is cut then we will take it back and reimburse you for what you return.
Prices for 2023 are below. Unfortunately, due to the skyrocketing cost in diesel, hay and all other inputs this is our first price increase in 6 years and we are forced to remove quarter shares from our offering. Remember that this INCLUDES everything including custom cut and wrap to your specifications. No surprises. Delivery is also available for an additional fee of $50 for the greater Phoenix, Tucson, Payson or ShowLow area. Delivery outside these areas will be charged by the mile.
We only harvest as we have orders for beef so please contact us to get on the schedule. We are currently taking a wait list for 2023 dates. We confirm the schedule once we have received a deposit. There is no deposit necessary to be on the wait list. To comply with Federal and State law, we cannot stock or sell beef from inventory. We are only allowed to sell by the half or full animal. You can share with as many people as you would like once you get your meat. All beef is labeled "not for resale" as required by law.

SAVE MONEY by sharing - Consider sharing an animal with a neighbor, family or friend and save money for both of you. If two of you split a full beef, then you each get your half cut the way you want it and you each pay the reduced price for the whole animal rather than the half price. Share with as many friends as you would like however each full steer can have only two cut sheets - one per half share. If you want to share with more people that is just fine but the cut sheets need to be consolidated to two for one full animal.
Please plan on reserving your beef early since we tend to sell out each year. We ask for a non-refundable $100 deposit to hold your reservation for new customers. Orders are confirmed only when the deposit is received. Then we can provide a firm harvest date.
